Week 2 of Football Yummies!

This week I made my favorite soup. My friend Jessi introduced me to this soup two years ago and it quickly became a favorite of mine!

Cheeseburger Soup

1lb ground beef
1 1/2c chopped onion
1 1/2 c. chopped carrots
1 1/2c diced celery
2 tsp. dried basil
2 tsp. dried parsley flakes
8 TBSP butter
6 c. chicken broth
8 c. diced peeled potatoes
1/2 c. flour
16oz processed American cheese, cubed (2 cups)
3 c. milk
1 1/2 tsp salt
1/2 tsp pepper
1/2 c sour cream

In a 3qt sauce pan, brown beef; drain and set aside. In the same sauce pan, saute onion, carrots, celery, basil and parsley in 1 TBSP butter until vegetables are tender, about 10 minutes.

Add broth, potatoes and beef; bring to a boil. Reduce heat; cover and simmer for 10-12 minutes or until potatoes are tender. 

Meanwhile, in a small skillet, melt remaining butter, add flour; cook and stir for 3-5 minutes or until bubbly. Add to soup; bring to boil.

Reduce heat to low, add cheese, milk, salt, and pepper; cook and stir until cheese melts. Remove from heat; blend in sour cream.

Yield 16 servings.
